We've had SO many requests for this recipe so here it is - it's super simple and delicious...
80g Coconut oil
220ml Honey
1 teaspoon flaked salt
480g Jumbo rolled oats
400g mixed nuts roughly chopped
100g pumpkin seeds
100g coconut shavings
2 egg whites - whisked until frothy
200g dried fruit
Heat the oven to 150 C and line 2 large baking trays with parchment paper
Gently melt the coconut oil in a saucepan with the salt and honey - take off the heat to cool
Mix all the dry ingredients in a large bowl and stir in the oil/honey mixture until it’s all well coated
Add the frothy egg whites
Spread out on the baking sheets and bake for 30-35 minutes - stir occasionally to get an even brown colour
Leave to cool and crisp up then stir in the fruit
